Teff
This lot was processed as experiment lot. After harvesting the coffee, we clean and float the cherries with water, then it will be sorted by hand make to sure the red cherries going to the next process. we put the sorted cherries in fermentation tank with Teff Dough (details about teff below) for 4 days in the fremetion tank. Ones it fermented, we take it to african bed for drying 14-17 days.
Teff is a traditional grain in Ethiopia and one of the country's staple foods. It's highly nutritious and naturally gluten-free.Teff has a symbiotic relationship with yeast, which allows the flour to be used as a starter, or in Amharic “Ersho,” without yeast additives.
This coffee is sourced from our farm Gatta. Gatta Farm is the place where we run a dedicated specialty program. Daye Bensa’s Gatta Farm is at the heart of Shantawene Village, in Sidama Bensa, Ethiopia. It sits at an altitude of 2120 – 2210m in the midst of a natural forest. The site is surrounded by indigenous trees, which are older than 100 years, waterfalls, and rivers. One of the rivers separates Shantawene from Bombe and runs from the hills above Keramo. Gatta Farm has been named after a waterfall which crosses the farm.
