Neftalem Station

Background

Niftalem Washing Station is located in Sidama Region, Eastern Zone, Chire Woreda, within Abaye Kebele, at elevations ranging from approximately 1,700 to 1,950 masl. The station sources coffee from nearby coffee-growing areas including Abaye, Lalesa, Xaratu, and Burkayesa, regions known for their favorable highland climate and fertile soils. works closely with around 350–450 dedicated smallholder farming households, supporting consistent cherry supply and quality-focused production. The station primarily produces washed coffees, with occasional Natural lots processed. With strong processing infrastructure, experienced operational management, and careful post-harvest handling, Niftalem is recognized for producing clean, balanced Sidama coffees with clarity and freshness in the cup.

Processing Method

  • Washed Process

– Fresh red cherries are delivered to the station and pulped on the same day
– Coffee undergoes controlled fermentation to break down and remove mucilage
– Thorough washing ensures clean and uniform parchment
– Coffee is then spread on raised drying beds, turned regularly, and protected from excessive heat or moisture
– Drying typically takes 12–15 days depending on weather conditions

  • Natural Process 

– High-quality cherries are carefully selected and processed separately
– Extra attention is given to sorting, cleanliness, and processing precision
– Extended care during drying helps enhance clarity, sweetness, and cup character
